You really need to read more about Active Directory, Windows Server Roles (if you are interested in file server), User Management, there are plenty of resources out there.

I would open "Group Policy Management" and create a new group policy. Call it "Redirect My Documents".

Apply this policy at the root or better yet the folder where the machines are located.

Go to User Configuration -> Folder Redirection -> Documents

Target folder location Select
"Create a folder for each user under the path root"

Root Path
\\servername\sharename\users

This will automatically create the folder on the server when you create the user and logs into a domain computer.

ON the server here is the default permissions you should have.
