Parallels
, it seems to be all the rage as it is the only fully released virtualisation solution for Mac OS/X on Intel. (Vmware have a product in Beta and Microsoft's Virtual PC runs on PowerPC only). Parallels allows you to run Windows and Linux alongside applications on your Mac desktop. It also takes advantage of virtualisation features in the Core Duo chip set.

DaLight's post is correct, there is a rumor going around that Parallels will launch a virtualisation solution for PCs to run Mac OS X but nothing is sure yet...
