Hi phedskie and welcome to f.cx...
First of all you didn't say which mail client you are going to use.
Although I haven't used eudora for a long time (before spam was such a big problem ) what I can tell you is that Mail.app (Apple's mail client) is a very good program and offers its own anti-spam solutiuon which it calls junk.
You set it at training mode which means that you'll get all the mail and the ones that the program thinks are spam are flagged as Junk. If one isn't or one that isn't flagged is you let the program know.
After training (the more the better) you set it to act as a spam filter and send them to trash etc...
