Our school is planning on hosting a cisco curriculum server, my question is, if there's a software / system that cisco provides that you would just install on a server?

Hi, You may be best Emailing cisco and asking them if they can provide you with the course materials for just that purpose. They may have some kind of academy deal thing going or something although you may need to be a registered instructor to have access to that kind of stuff.
Failing that, anyone registered on the Cisco courses as a student can access all of the online curriculum relating to their course. You could always just save each page (time consuming though, perhaps) and set up a campus network server with the pages on.
I'm sorry i can't be of more help. Perhaps someone on this site is closer to cisco and could tell you more...
