First off, Welcome to Firewall.cx!
What you are after is called OCR ( Optical Character Recognition ), not all scanners can do that, most of your newer scanners should, however either way, you will need to check with your scanners manafacture to see if and how it can be done.
If your not sure how to do that or if your unable to locate the information, please post the make and model of your scanner and what OS you are using and we will try and locate that for you.
Also insure you have the latest driver for your scanner.

Its not the scanner that does the character recognition, but the software. So you can use any scanner to scan your documents, then you can use one of the many applications out there to perform the conversion.
Do a google search for OCR software or something like this.

and be prepared to get your wallet out... ocr is not cheap !
if it's any help, we've all thought "oo I will just scan this in and use it as a doc for the basis of something much bigger..."
Quicker and cheaper to type it in yourself in the long run
