DHCP & VLAN's (How do they work together?)

Hi all,
thanks for the usefull information. My network currently consists of 5 Extreme switches, and many smaller netgear switches. My core switch is a Alpine 3808 (layer 3). The other 4 switches connect to this switch via Gb fibre trunks, clients hang of all the switches or the smaller netgears under these. Servers hang mainly of the Apline Chassis. The whole LAN is one layer 2 broadcast domain i.e. one subnet. There's where my problem lies, when it comes to doing backups or heavy copy jobs the whole network slows down to a halt!
Anyway my DHCP servers are Microsoft Domain controllers.
I'd like to keep that the same I just needed to understand how my dhcp server would provide addresses to machines on different VLAN's when I set them up.
