Your best bet is to buy yourself a book and study it in your own leisure. You will also need a spare machine to help you practice the material you are reading.
Personally, this is by far the best way to get practical experience and also end up with a valuable book on your bookshelf (that's after you have read it!)

First I’m very surprised Chris didn’t say to read his site (Firewall.cx)!!
Firewall.cx is an excellent resource, period!
In response to what Chris did advise about obtaining another computer for practice is very good, to add my two cents worth on that note instead of having a physical box at hand you could also try VMWare ( www.vmware.com/ ) this would allow you to have a virtual network with multi platform OS’s such as Win 3.1, Linux, NT, etc..
This would allow you to help keep cost and wasted space down if that is a concern.
You can tailor make your own network as needed, its very cool and exciting software.
Download a trial and see.
